Hugely versatile white grape, from bone dry to intensely sweet to sparkling, with very high acidity that can make for surly youth, but magnificent maturity. A great absorber of noble rot, pivotal both in the Loire’s Touraine and in South Africa, where it’s the backbone of the food-friendly Cape white blend.
