Tuscany’s ‘blood of Jove’ lends plumminess, velvety texture and a touch of the spice jar and a distinctive dry finishing twist to good Chianti, and, increasingly to the grapescape of Oz. In Corsica, where it’s known as niellucciu the fragrant local maquis (wild shrubland) adds to its charm.
